If you have social media or know anyone that follows trendy food behaviors, then you have heard of cauli- rice. What is it? It’s cauliflower chopped up into tiny pieces and it strongly resembles rice in appearance and texture. Cauliflower is bland like rice so when you season it, you really do not notice a difference. I mean.. its not real rice. But its delicious and it is the perfect substitute.
1 cup of rice has 206 Calories – 45 g carbs – 0.6 g fiber
1 cup of cauli- rice has 25 Calories – 5 g carbs – 2.5 g fiber
^^^there is no debate here on which option is the best for your healthy diet^^
Sidenote: “Cauliflower contains sulforaphane, a sulfur compound that has also been shown to kill cancer stem cells, thereby slowing tumor growth. Some researchers believe eliminating cancer stem cells may be key to controlling cancer.”
Grains, such as rice can be very inflammatory in our bodies. Does this mean that we should never eat it? Nope. It just means that you should consider switching it out for other options once in a while. Also, this is toddler approved. They have no idea 🙂
The best news of all… you no longer have to buy a whole head of cauliflower and “rice” it yourself. You can find the frozen bags of cauli- rice at your local grocery store alongside the other frozen veggies. Life changing. You can thank me later.

- 1 bag of frozen cauli- rice or 1 head of cauliflower "riced" in food processor
- 2 TBS olive oil
- Juice from 1 lime
- ½ cup chopped cilantro
- salt and pepper to taste
- Sauté cauli- rice in a large skillet over medium heat in 2 Tbsp oil.
- Cover with a lid so the cauliflower steams and becomes more tender. Cook for a total of 5-8 minutes
- Remove lid and add the lime juice, chopped cilantro, salt and pepper.
- Cook while occasionally stirring for about 2 mins.
