  • ½ Tablespoon Coconut Oil
  • 3 Large Eggs
  • 1 Cup Fresh Spinach, Chopped
  • ¼ Avocado (sliced)
  • ½ Teaspoon Sea Salt
  • ½ Teaspoon Cracked Black Pepper
  • ½ Teaspoon Turmeric (optional)
  • ¼ Cup Crumbled Feta Cheese
  1. In a medium bowl: whisk your eggs, salt, pepper, and turmeric.
  2. Heat the coconut oil over medium heat in a 6-8 inch skillet.
  3. Once oil is melted, pour egg mixture into skillet and stir constantly with a rubber spatula, moving the eggs around the pan until they form small curds, about 2 to 3 minutes.
  4. Gently shake the pan and use the spatula to spread the egg mixture evenly across the pan.
  5. Sprinkle the chopped spinach, feta, avocado, and any other veggie or meat you desire on top of the egg mixture.
  6. Remove the pan from heat. Using the spatula, fold the omelet in half.
  7. Garnish with fresh vegetables or your favorite herbs.
  8. Enjoy.
