Cilantro Lime Chicken & Zucchini Salad

A light, fresh summer meal.
Serves: 4
  • *Grilled Chicken*
  • 1.5 lb chicken breast
  • 1 large handful of fresh cilantro
  • 3 limes, zest and juice
  • ⅓ cup olive oil
  • 1.5 TBSP honey
  • 2 cloves minced garlic
  • ½ tsp paprika
  • 1 tsp salt
  • 1 tsp cracked black pepper
  • *Salad*
  • 2 medium ot 1 extra large zucchini (use spiralizer to make "noodles")
  • ¼ cup chopped, red onion
  • 1 cup halved cherry tomatoes
  • 2 TBSP fresh lemon juice
  • 1.5 TBSP olive oil
  • 2 TBSP balsamic vinegar
  • 1 TBSP honey
  • ½ tsp dried oregano
  • ½ tsp salt
  • ½ tsp cracked black pepper
  1. Place chicken breast in a large bowl.
  2. In a food processor, combine cilantro, lime juice and zest, olive oil, honey, garlic, paprika, salt, and pepper. Blend until smooth and paste like.
  3. Pour ¾ of the marinade over the chicken. Mix until chicken is fully coated.
  4. For best flavor, set bowl of chicken in the fridge to marinate. Also, place the remaining marinade in the fridge.
  5. In a large bowl, mix zucchini noodles, tomatoes, and red onion. (optional: olives, diced cucumber, or any fresh veggie)
  6. In a separate bowl whisk together lemon juice, olive oil, balsamic vinegar, honey, oregano, salt, and pepper.
  7. Pour over the salad.
  8. Now, grill your chicken until it is done throughout.
  9. Serve the chicken on top of the zucchini salad. Don't forget to spoon a little bit of that extra marinade over the chicken.
