Cilantro Lime Cauliflower Rice
  • 1 bag of frozen cauli- rice or 1 head of cauliflower "riced" in food processor
  • 2 TBS olive oil
  • Juice from 1 lime
  • ½ cup chopped cilantro
  • salt and pepper to taste
  1. Sauté cauli- rice in a large skillet over medium heat in 2 Tbsp oil.
  2. Cover with a lid so the cauliflower steams and becomes more tender. Cook for a total of 5-8 minutes
  3. Remove lid and add the lime juice, chopped cilantro, salt and pepper.
  4. Cook while occasionally stirring for about 2 mins.
  5. Enjoy!
