Paleo Almond Crusted Chicken

Serves: 3-4
  • 1 cup blanched almonds
  • 1 tbs garlic powder
  • ½ tsp paprika
  • ½ tsp dried oregano
  • 1 tsp salt
  • 1 tsp cracked black pepper
  • 1 egg, beaten
  • 4 small chicken breast halves
  1. Preheat oven to 375 degrees F.
  2. Place almonds in a food processor and pulse until the pieces are fairly small. Add the garlic powder, paprika, oregano, salt, and pepper and pulse until mixed together.
  3. Pour the almond and seasoning mixture into a shallow bowl.
  4. Pour the beaten egg into a separate shallow bowl.
  5. One piece of chicken at a time, dip into egg mixture and be sure to thoroughly coat. Next, dip into the almond mixture and cover entirely.
  6. Place each piece of chicken onto a nonstick pan or on a pan lined with parchment paper.
  7. Bake for 25-27 minutes, or until chicken is cooked throughout.
  8. Serve hot and enjoy!
